My obsession began with a single blade: a hand-forged Gyuto from a small workshop in Seki. The balance, the edge, and the soul of the steel changed the way I viewed cooking forever.
Driven by curiosity, I began traveling to Japan, meeting the blacksmiths whose families have refined their craft for generations. Sourcing these knives meant building real relationships based on respect for the tradition of the forge.
